
A Simple Japanese Dumpling Soup I Make on Busy Days

I work full-time in Japan, and when I come home after a long day, I often look for meals that are comforting but don’t require complicated preparation. Suiton is one of those traditional Japanese home-style dishes that feels warm, filling, and satisfying with simple ingredients.

Suiton is a Japanese dumpling soup made by dropping a soft flour dough directly into a flavorful broth. Unlike wrapped dumplings, these flour dumplings are rustic and easy to prepare, making this a great option when you want a homemade meal without spending too much time in the kitchen.

The best part of Suiton is how simple the dumplings are. All you need is flour and water. After mixing the dough, letting it rest while preparing the soup helps create a smoother texture.

This chicken dumpling soup is the kind of meal that reminds me of everyday Japanese cooking—simple ingredients, warm broth, and something homemade to enjoy at the end of a busy day.

Ingredients (2 servings)
Soup:
- Daikon radish: 2 oz (60 g), thinly sliced
- Carrot: 2 oz (50 g), thinly sliced
- Green onion (negi): 1 oz (25 g), thinly sliced
- Chicken: 4 oz (110 g), cut into bite-sized pieces
- Water: 3 cups
- Soy sauce: 2 tbsp
- Mirin: 1 tbsp
- Dashi powder: 2 tsp
- Salt: 1 pinch
Dumplings:
- All-purpose flour: 1/2 cup
- Water: 6 tbsp
Instructions
- Mix the flour and water in a bowl until a thick dough forms. Set aside while preparing the soup.
- Slice the daikon, carrot, and green onion. Cut the chicken into bite-sized pieces.
- Add the water, daikon, carrot, chicken, and dashi powder to a pot. Bring to a boil, then reduce the heat and simmer for about 15 minutes, until the vegetables become tender.
- Add the soy sauce, mirin, and salt to season the broth.
- Use a spoon to drop portions of the dumpling dough into the simmering soup. Cook for 2–3 minutes.
- Add the green onion and simmer for another 2–3 minutes, until the dumplings are cooked through. Serve hot.
